    For me it’s my triple clad 12 inch stainless steal pan with high walls and lid. It’s more multipurpose than a frying pan but can do almost anything the frying pan does. I use it more than the Dutch oven for what I like to cook but the Dutch oven is a close second.

    Back in the early eighties, scientist working for USDA were testing cutting boards for safety. With all the different types they had, they just threw in a wooden cutting board as a example of something they assumed would be bad. They loaded the boards with bacteria, and tested them. All of them failed badly, except the wooden board. Asssuming the wooden board was a mistake, the loaded it up with bacteria, and ran the test again. The next day, 99.7 % of the bacteria were dead. This was a surprise. How can a porous wooded cutting board, that millions of bacteria beat every other cutting board? Forty years later, they had repeated the test hundreds of times, and it comes out the same. Wooden board are the safest, when it comes to bacteria. There is just something about a wooden cutting board that kills bacteria. There is bad news. Plastic cutting boards are damn dangerous. The plastic was found to cause the bacteria to form a cyst. The cyst walls protects the bacteria, evern from the effects of a dish washer. So if you cut a pieces of meat, on plastic cutting board, and put through a dish washer, it is not as safe, as a wooden cutting board. Industry who makes plastic cutting boards fight this fact, but they are wrong. I know you want to argue. I’m right, and you’re wrong, so shut the hell up.

    ⚠️The use of goddamn is ultra and unexpected in this video. I would add, that an induction cooktop is a best practice for any home cook.

    The infrared laser thermometer is great for checking the temperature of, say, a wood-fired baking oven, but useless for boiling liquids. I’ve tried to use an IR laser when candying ginger, but it wouldn’t give me any readings over about 80℃, even when the sugar syrup was boiling and pretty concentrated.

    cool video…..but sigh, being disabled myself, your kitchen essential tools list does me almost no good….and could you please not point the laser at the camera, it’s just plain rude and can be really dangerous to some of the people watching this video(i mean, what if they are epileptic like me….they might end up having a seizure due to the strobe light effect)…..

    kitchen essentials. What is it with "top ten". It’s form over substance. In this case 11 would have been better. The most glaring omission is a good pan. Or how about 12 by adding another essential, a sheet pan. Ditch the thermometer for a can opener.

    Add two one-piece silicone spatulas, one big and one smaller one. They don’t cost much but are multi-purpose and save a lot of money as they scrape almost everything clean. Less food waste and washing up.

    As a chef I would recommend looking into a cutting board that comes with colour coded mats. The mats make cleaning super easy

    Using Dutch oven for Indian curry – may be a bad idea. Carbon steel wok – shear the meat or veg and then spice or vice versa.
