Making Potato Chips at Home: Definitely Worth It

► Potato Chips Recipe
2-3 large starchy potatoes (e.g. Russet; mehligkochend)
washed well
sliced evenly; 0,5-2mm worked for me
rinsed very well
dried thoroughly on kitchen towel
added to 1l room temp cooking oil
cook on medium heat, 30+ minutes
remove first chips as they cook and turn a light brown
cook rest until done
salt to taste, toss
let cool completely (!)
store in zip lock bag

    I’ve always preferred paprika/chilli flavoured crisps, which will be reddish regardless of cooking method due to the spices. I think it’s best to just roll with the browning and make the best of it, but of course everyone’s tastes (visually and culinary) differ

    My favourite way to make potatoe chips (crisps) is to "twice -fry" them. I leave the skin on, but wash and control for bad or green spots You need a sieve or similar kitchen utensil, 2 bowls, besides the usual frying utensils.
    1 You put the first battch of potatoe slices in medium hot oil, let them fry till half done,
    2. take them out and put them in 1st bowl
    3. put the next batch into the frying pot, let them fry till half done,
    4.and take the second batch out to put them in the 2nd bowl
    5. Now put the first batch back in and finish frying them, then take it out and place the chips
    on a sieve or colander to let the fat drain (onto a deep dish or similar).
    6. finish second batch, finally pour the drained fat back into the pan.
    Why waste paper towels and good oil, if you can just drain and re-use it ?
