I’m SUPER CONSERVATIVE BUT I LOVE PBS AND AMERICA’S TEST KITCHEN!
I literally LOVE this channel and all of you guys on it; I have learned so much that I actually surprise myself whilst discussing certain culinary issues with more experienced cooks and even chefs who cook and bake professionally. I actually sound like I know what I’m talking about, and you know what? I do! It’s all because I don’t watch you guys for entertainment; I watch to LEARN, and real learning takes place. Thank you so much for all of the effort put into these episodes. You are helping millions of people not just in the US (although for some reason, some western Europeans watching this are often loath to admit it), but around the globe! You’re fantastic and my absolute favorite culinary channel!
This is one of the best cooking shows on pbs, kstw, and now on food network. But more or less great without Chris Kimbell, yeah…

The longer you cook a steak, the hotter it gets, and as it heats up, the muscle fibers get firm and all the juices cook out. The result is that the interior of a well-done steak is a uniform gray color, and the steak itself is tough, chewy, flavorless, and dry. This isn’t cooking; it’s arson.
Most chefs regard beef cooked to medium-rare — with an internal temperature of 130-135F (55-57C) — as the best way to bring out flavour and retain moisture in tender cuts such as rib eye and top loin.

By far my favourite cooking show !! I have watched since Chris Kimble days and really enjoyed it then , but when he left the show and then Julia and Bridgette took over as lead hosts of the show I wasn’t too sure if it was going to be as good. How wrong I was! They work so well together and the accompanying chef/ cooks on the show all come together to give such a relaxed vibe. You all look like you’re having fun and at the same time giving us some great ideas and information on how to prepare some very tasty food. And you know because it’s the “Test Kitchen” the recipe has been tried many times and perfected already for the rest of us.

It was so nice to see you all together! There is not one person in your group I dislike, I love and admire you all. You should consider having a fan on a few shows (me, please) to add to the sharing attitude which draws me to watch your shows. I would even stay after to help with dishwashing, my girlfriend has taught me that it can be quite therapeutic and calming. When I cook at home I always wash dishes as I go along when there is downtime during boiling, searing, and baking. Make it less stressful and my hands stay even cleaner!! (yes I am big on cleanliness)
That short bread dessert…. I would have going a way to put peanut butter in the mix!
