    As a member of a World Championship Barbecue Team, pulling hot bbq when catering to 200 people can get tough on the fingers. We have tried various kinds of gloves to handle hot meat. The general consensus as to what works best is also the cheapest. We buy packs of white cotton knit gloves from Northern Tool Co and a box of XL Nitrile disposable gloves. The Nitrile gloves go over the cotton and prevent hot fats/liquids from getting through to your hands. They provide much better dexterity than any other heat resistant gloves available. Any gloves that have more insulation lack the dexterity to do most tasks.

    I use hot hands to pull my pork. Have to have my wife pull them off. 275 is too hot to smoke. Low and slow.
